Carrots are often touted as being beneficial for eye health, and for good reason. They are rich in beta-carotene, a type of vitamin A that is essential for good vision.

When we eat carrots, our bodies convert the beta-carotene into vitamin A, which helps maintain the health of our eyes.

Vitamin A plays a crucial role in several aspects of eye health. It helps maintain the clear outer layer of the eye (the cornea) and is essential for the function of rhodopsin, a protein in the retina that allows us to see in low light conditions.

Vitamin A deficiency can lead to a condition called night blindness, where it becomes difficult to see in dim light.
